Smoked haddock and spinach lasagna.


This different take on lasagna is one of my favourites.  Imagine smoky fish and garden spinach, that is topped with a creamy sauce with a crisp parmesan crust...

Using home-made pasta  (click the link) or pre-made sheets.
700 g (1 1/2 lb ) fresh spinach (or about 450 g or 1 lb  frozen)
1 fillet of large haddock (or 2 smaller fillets)

Bechamel sauce
40 g / 1/3 cup flour
55 g  / 1/4 cup butter
750 ml / 3 cups milk and cream mixed (I like 2/3 milk to 1/3 cream)
salt and some nutmeg, thyme or chives

Topping
parmesan or cheese of your choice (enough to cover the top)
few tablespoons of bread crumbs

Make the pasta and roll out into sheets or follow the instructions on your packet if using dried (i.e. if you need to precook them or not).
Cook the fresh spinach for a few minutes and press out excess water (the same for frozen press out the water - no need to cook).
Make the bechamel sauce, melting the butter and adding in the flour.  Whisk in the liquid, a bit at a time, and add in salt and some nutmeg, thyme or chives. 
Skin the fish and remove any bones. Cut the fish in to small pieces.
Layer the lasagna with a bit of everything until you fill your dish (keeping a third of the bechamel for the top!).  Pour on the rest of the sauce over the top and grate on the cheese on adding the bread crumbs. Bake for 55- 60 minutes (It needs to be bubbling!) at 180°c/350°f

  2. I'm making mushroom lasagna for Sunday night. Must have comfort food in this weather. Can you get no-boil lasagna noodles in France? Saves a lot of time and having to deal with those slippery noodles. H

  3. Ivan...your ease with description and "how to" make this and every recipe sound so effortless. I want to be a chef in my next life, unless of course I come back as a Labradoodle then my chef life will be 2nd in line!

  6. This looks so good. And easy, which I like! I adore haddock but, do you know, it never occurred to me to eat it in a lasagna with spinach. Yum. I am definitely going to try this one, thanks Ivan.

      Thanks, The trick is to squeeze out the excess water from the spinach - the combo is really good comfort food (and any fish would work to be honest).

  7. I have made a similar dish to this but with cooked rice and the sauce has a bit of mustard in it.
    Hey! Guess WHAT? I think I have become a better cook just since I have been reading your blog. Honestly, I have...someone looked at my blog and saw my Chocolate cake recipe from my blog from March 12, 2012...if you get a chance look at it and see what you think. I made it today but instead of using almond flour, I used 1 cup rice flour and 1/3 cup cornstarch and also added 1/2 of finely chopped oranges! It was delicious! Did you know that today in America it is Chocolate Cake Day? Sounds like a good day to me! xx

      Pleased to hear it! A bit of inspiration to find your inner chef is fantastic! The cake sounds good and I shall look it up. I use rice flour a lot and I was trying out a rice flour 'pasta' for a Celiac post - it need more work as all new things, it was ok but I always see if I could do better (work in progress!). I didn't know it was Chocolate cake day - I will have to catch up!!

  9. I made the fish-and-basmati recipe you call John Dory, using flounder. Easy and quick, and oh so good. My presentation, alas, was perhaps not quite up to your standard. Because I like it, and to offset the fat, used a squidge of lemon at the end. Thanks for a most excellent recipe.
