Fresh sardines barbecued...


As a quick lunch, we often have fresh sardines on the barbecue (in all weathers!).  Apart from their health benefits, I think they just taste fantastic!  They are stuffed simply and served on grilled bread.  To prepare the fish, I pinch off the heads and the insides come out at the same time.  Putting them tummy side down push the back bone down, flip it over and all the bones will come out at once.  To make the stuffing (PER FISH) - mix a tablespoon of breadcrumbs, a teaspoon of olive oil and a half teaspoon of fresh herbs of your liking (dill, parsley, chives...)  and place in the cavity of the fish - salt and pepper the outside.  Grill for 2 minutes on each side.  The toast can be grilled at the same time.  A lightly dressed green salad goes very well with this dish.

  1. I've never seen a fresh sardine, only canned. I didn't even know they got that big, lol.

      It's only because we live near the coast that we get them easily (sorry!). They are so good and cooking them always takes me back to being a small child on holiday in Portugal, where they eat a lot of them on massive barbecues (the most amazing smell). They also have 'aged' ones in tins in France which are really good but so expensive!

  3. I am with Terry on this....I have only had canned sardines. These do look delicious Ivan. I eat the canned ones with a little dijon mustard and mayo. In fact I think I have a tin.....see you later!

      I love all sardines... but the smell of them grilling makes me think of 'sun-baked childhood holidays' so when it is raining, that's not too bad a memory!!

  4. Me, too.....have never seen them this size in Washington, DC. I'd love to make this....sounds easy enough. And, I enjoy grilling anytime of the year. Have you posted many grilling recipes on your blog? I'm a first time visitor.

      Thank you for visiting. I was on your beautiful blog yesterday. I don't think I would be allowed in your shop for fear of buying it all!! Your dining room is wonderful. We have friends who have an antiques shop like you and we also get to see a regular change of chairs, pictures, tables!! As for the grilling side, I have some recipes but I have a lot more to come!!
